I found a recipe on AllRecipes.com for Peanut Brittle. Looked easy enough, only a few ingredients, which I mostly had… of course no peanuts so substituted raw cashews.
Added sugar, water and corn syrup and boiled until I THOUGHT I was in hardball stage, then added the cashews… but apparently that was a bit too early. By the time the sugar solution was just turning color into that familiar brittle brown, the cashews were starting to burn. This probably should have cooked an additional 30 – 45 seconds but to save the nuts, had to remove. Turned out pretty good though for not having a candy thermometer!

I’ll definitely make this again, of course not adding the nuts until I see the liquid starting to turn color. Beware though, I can tell this is very easy to burn, upon adding the baking soda, the mixture turned color very fast. So maybe it was a good thing I had to remove prematurely.
