This is by far my favorite “quick dessert” recipe. Very simple, but it looks and tastes much more complicated than it really is.

Ingredients
- 1 package refrigerated sugar cookie dough
- 1 package cream cheese, softened
- 1/2 c. 10x sugar
- 1 stick butter, softened
- 1/4 tsp. vanilla
- fresh fruit of your choice (I use strawberries & kiwi)
Directions
- Preheat oven according to directions on sugar cookie dough.
- Line a muffin pan with paper cups. Press roughly 2 tbsp of cookie dough into the bottom of each cup.
- Bake slightly longer than directed until cookies are starting to brown. They will puff up pretty high but then fall back down once you remove them from oven causing a “well” for the toppings.
- Beat together cream cheese and butter until smooth, then add vanilla and 10x sugar, mixing well.
- After cookies have cooled, use the back of a spoon and spread icing mixture into the “wells”.
- Top with fresh sliced fruit of choice and refrigerate.
