The most incredible Szechuan Chicken & Shrimp

Posted on Mar 03 , 2010 in Blog

And I forgot to take a picture! I found a recipe on my favorite site ever, AllRecipes.com, and changed it around a bit. I’ve never made Chinese food before, but this was very simple and fast and could rival anything you get from your neighborhood Chinese restaurant. Probably one of the best meals I’ve made in a long time and it will be a bi-weekly staple around here from now on. Mom, you should make this.

Ingredients:

  • 1/2 c water
  • 1/4 c ketchup
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp sugar
  • dash of crushed red pepper
  • 1 tsp ginger
  • 2 tsp Sriracha
  • 2 tsp sesame oil (vegetable is fine)
  • 1/4 c chopped green onions
  • 1 tsp minced garlic
  • 1 lb. shrimp, cooked peeled
  • 2 boneless skinless chicken breasts, cubed

Directions:

  1. Mix first 8 ingredients in a small bowl
  2. In a large skillet, sautee the garlic, green onions and chicken over medium heat with the sesame oil. Once the chicken is just about cooked through, add the sauce mixture and shrimp, turn to coat.
  3. Cover and let simmer 5 – 10 minutes until sauce is thick and bubbly.
  4. Serve over white rice.
Feel free to add veggies to this, broccoli & snow peas would be awesome. Or even only veggies! I’m no vegan ingredient expert, but seems easy enough to switch up to be vegan-friendly.

I’m sure Splenda will be fine, it really isnt supposed to sweet, just a touch. The original recipe actually called for honey instead but didnt want to buy it, I never use honey.
